Cacao beans grow in green pods, which are hand-picked from the tree and the flesh surrounding the beans is then allowed to ferment away. This enhances the bean’s unique flavour and reduces their bitterness. The beans are then broken into small pieces, or nibs. Cacao beans and nibs are very nearly the most raw form in which Cacao can be consumed.
To make cacao powder these small pieces are ground into a paste and then pressed. The remaining ‘cake’ is milled into powder.
50% of cacao’s mass is actually composed of fats, however none of these are harmful to us. As beans and nibs are minimally processed, an optimum amount of their nutritional value is retained. Cacao powder is still highly nutritions, however it has its fat content removed. This results in slightly less nutrition than beans or nibs, as a trade off for its low-fat status.
The cacao used in Green Origins Organic Cacao Powder is grown in South America, its native region. Cacao trees are found on the lower story of the evergreen rainforest as they thrive in humid temperatures with fairly constant rainfall, these conditions encourage optimum organic growth.
